Functional Waters 101: Coconut, Aloe, Mineral, Birch & Chlorophyll Water Compared

  • Human cells hold roughly 0.9% dissolved salts, while fresh water is closer to 0.1%. That gap is the entire reason plain water alone doesn’t always hydrate you as well as you’d expect.
  • Don’t assume more plain water is always better. Healthy kidneys can only process about 900 mL of water an hour, and drinking well beyond that without any sodium can be genuinely dangerous.
  • Coconut water happens to be naturally close to isotonic with human cells, which is part of why it became a hydration category on its own instead of just another flavored drink.
  • Reverse osmosis and distilled water strip out minerals almost completely. Distilled water measures 0 parts per million of dissolved solids, compared to 40 to 55 ppm for a typical bottled spring water.
  • I don’t recommend switching to alkaline or heavily filtered water to self-treat a diagnosed digestive condition without your doctor involved. I’ll explain what the research actually supports and where people have run into trouble pushing it too far.

0.9% versus 0.1%. That’s the dissolved-salt gap between your own cells and plain fresh water, and it’s a bigger deal than most people realize when they’re chugging a bottle after a workout.

Once you understand that gap, most functional water types compared questions get a lot easier to answer, because nearly every water category in this guide exists to close that gap in a slightly different way.

What Does “Isotonic” Actually Mean for Hydration?

I use a simple classroom demonstration when I’m explaining this to clients: eggs with their shells dissolved off in vinegar, soaked in three different solutions. In salt water they shrivel, pulled by osmosis toward the higher outside concentration, and in distilled water they swell as water rushes in to balance things out.

In a solution matched to the egg’s own internal solute level, nothing happens, the egg stays exactly the same size. That third state is isotonic, and it’s the target you actually want for fluid entering your body, matched to the sugars, salts, and minerals already inside your cells.

Coconut water happens to land close to naturally isotonic with human cells, which is the real reason it became its own hydration category instead of just another fruit-flavored drink. I go through exactly what’s in it, and where the science holds up, in this article on coconut water benefits.

Can You Actually Drink Too Much Plain Water?

Yes, and the mechanism is worth understanding before you assume “more water” is always the safe default. Healthy kidneys can only excrete roughly 900 mL of water per hour, and drinking enough plain water to expand blood volume faster than that, without any sodium alongside it, creates a real risk of water intoxication.

Sweat itself carries about 40 mmol per liter of sodium chloride, so replacing more than about 1.5 liters of sweat loss with plain water alone can push serum sodium dangerously low, a condition called hyponatremia. The World Health Organization’s standard oral rehydration formula, a small amount of salt and sugar dissolved in about a liter of water, exists specifically to get sodium and glucose back in through the same transport system, not to add water alone.

A close friend of mine learned this the hard way, drinking over half a gallon of plain water a day while cutting salt strictly, then drinking even more when hungover to fight what she assumed was dehydration. She ended up in the ER with dangerously low sodium, needed a Lasix injection, and spent three days on water restriction with blood draws every four hours before her levels normalized.

That’s the extreme end, and most people won’t get anywhere near it. But it’s exactly why “just drink more water” isn’t universally safe advice, and why electrolyte content matters as much as volume.

What About Mineral Water? Is There a Real Difference Between Brands?

There’s a measurable difference, and it comes down to total dissolved solids, the actual mineral content left in the water. Distilled water measures 0 parts per million TDS, a typical bottled spring water like Poland Spring runs roughly 40 to 55 ppm, and some municipal well supplies exceed 190 to 485 ppm.

Standard reverse osmosis filtration strips water down below 50 ppm TDS unless it’s run through a secondary remineralization stage afterward. That’s not automatically bad, but it does mean an RO system quietly removes the same minerals a mineral water is specifically chosen for.

What Does Aloe Vera Water Actually Do for the Gut Lining?

Aloe has a long traditional history as a soothing agent for irritated digestive tissue, used well before anyone bottled it as a beverage. The inner leaf gel is the part used in aloe water, kept separate from the outer leaf compounds that are far more aggressive and not meant for regular drinking.

A client, Pamela, started drinking aloe water after hearing it might help with occasional digestive discomfort, and told me the biggest change was in how gentle it felt compared to other functional drinks she’d tried. I’m careful not to overstate the clinical evidence here, so we’ve laid out exactly what’s traditional use versus what’s actually been studied in aloe vera for gut lining.

What’s the Difference Between Birch Water and Chlorophyll Water?

These two get lumped together because they trended around the same time, but they’re not related at all. Birch water is tapped directly from birch trees for a few weeks each early spring, similar to how maple syrup is tapped, and it’s naturally low in sugar with a mild, slightly sweet, mineral flavor.

It also carries small natural amounts of manganese and xylitol, the sugar alcohol that gives it a faint sweetness without much actual sugar content. That’s a real compositional difference from most bottled waters, not just a marketing story.

Chlorophyll water is a different thing entirely, plain water with liquid chlorophyll added, usually marketed around detox and skin-clarity claims that outpace the actual research behind them. The pigment itself is well studied in other contexts, but drinking it dissolved in water hasn’t been shown to do what most of the marketing around it implies.

A market vendor, Anne, sells both at her stand and says customers usually pick birch water for taste and chlorophyll water because of something they saw online. That contrast tells you a lot about how differently these two products actually get chosen, one for flavor, one for a claim.

Does Alkaline Water Actually Do Anything?

This is where I want to be careful, because the science is real but narrower than the marketing around it. The pH scale is logarithmic, so stomach acid at pH 2 is roughly 100,000 times more acidic than neutral water, and diluting your way out of that with alkaline water alone would take an unrealistic volume.

Where the research does hold up is narrower and more specific. Alkaline water at a pH of 8.8 or higher has been shown, in research including work by laryngologist Jamie Koufman, to permanently deactivate pepsin.

Pepsin is the digestive enzyme that causes damage when it irritates the throat in conditions like laryngopharyngeal reflux. Denaturing it is the actual mechanism behind why some people find alkaline water helps, not anything mystical about “alkalizing” the body as a whole.

Community members I’ve worked with have described real relief from throat-level reflux symptoms after adding alkaline water alongside meals that normally triggered them. Others found that daily use over many weeks eventually backfired into worse reflux, which stopped as soon as they scaled back, suggesting a short-term therapeutic window rather than an “unlimited is better” pattern.

If you’re dealing with a diagnosed reflux condition, this is exactly the kind of change worth bringing to your own doctor rather than managing entirely on your own. Alkaline water can be a reasonable piece of a plan, but it isn’t a replacement for one.

What Happens When Filtration Strips Out Too Much?

Distilled and heavily filtered water solve one problem and can quietly create another. A local gardener I advised about preserving herbs and vegetables switched to a strict distillation setup for years, and found that even a gallon and a half after a workout never fully quenched his thirst, because he was draining sodium and potassium out faster than plain water alone could replace them.

He eventually moved back to a mineral-retaining filtration setup, and said it took only a couple of cups to feel satisfied compared to the endless refills before. That’s not a universal outcome, but it’s a useful reminder that “purer” water isn’t automatically the better choice for everyday hydration.

How Do You Actually Choose Between All of These?

Most people don’t need a functional water at all for ordinary daily hydration. The National Academies of Sciences’ baseline guideline is about 2.7 liters a day for women and 3.7 liters for men, with roughly 20% of that already coming from the water content in food.

Where functional waters earn their place is around the edges of that baseline: real sweat loss during hard physical work or heat, a specific mineral gap in your regular tap or filtered water, or a traditional preparation like aloe or birch water you simply enjoy. A local family I worked with on traditional food preparation, the Johnsons, keep coconut water on hand strictly for after yard work in summer heat and drink plain filtered water the rest of the time, which is close to the balance I’d recommend to most people.

My daughter, Emily, asked me once why we don’t just drink whichever water tastes best. Taste matters more than people admit, and it’s a perfectly fine tiebreaker once you’ve ruled out the water types that don’t fit what your body actually needs that day.

Cost is worth factoring in honestly too, since functional waters range from nearly free to genuinely expensive per bottle. Families who have asked me about traditional foods are often surprised that plain filtered water with a pinch of salt and a squeeze of citrus covers most of what a pricier electrolyte drink is actually doing.

What’s the Actual Takeaway Here?

None of these five water types is universally “best,” and that’s the honest answer even though it doesn’t make for a punchy headline. Coconut water solves electrolyte replacement, mineral water solves a TDS gap, aloe water offers gentle traditional gut support, birch and chlorophyll water offer flavor and trend appeal with different evidence bases behind them, and alkaline water has one specific, narrow, real use case tied to reflux.

Understanding the actual mechanism behind each one, rather than the marketing category it’s sold under, is what lets you pick the right water for what you’re actually trying to solve. That’s the same principle behind everything else on this site: know what the food or drink is actually doing in your body, not just what the label promises.

Start with whichever gap actually applies to you, mineral content, electrolyte replacement, or simple enjoyment, and build from there instead of trying every category at once.
