How to Make Water Kefir at Home: A Beginner’s Fermentation Guide

I went through about 15 cycles of primary and secondary fermentation where my water kefir was barely bubbly at all. I was using 5 cups of filtered room temp water, half a cup of pure cane sugar, and 3/4 cup of grains with an open 2-day ferment, followed by 2-3 days sealed with fruit.

The best I got was a mango batch, and it was only a bit fizzy. Adding a half-dozen raisins or 1/2 tsp of coconut blossom sugar for minerals, floating a lemon slice to keep yeast under control, and adding a chunk of fresh ginger completely changed the bubbliness.

After suffering from mental fog, anxiety, lethargy, and bloating flare-ups that made me feel like a zombie, I started drinking water kefir. Fast forward 12 days of gut adjustments and I felt like a million bucks, getting an immediate zinging feeling in my mouth and an energy surge so strong I cannot drink it before bed.

Learning how to make water kefir transformed my energy, but it took serious trial and error. The process demands precise ratios and a deep understanding of sugar-water fermentation.

What Are Water Kefir Grains, Anyway?

Water kefir grains are a symbiotic colony of bacteria and yeast bound in a polysaccharide matrix created from sucrose via the glucansucrase enzyme. You can think of this living culture as (SCOBY – a living symbiotic colony of bacteria and yeast that ferments sweet liquids into tangy, probiotic-rich drinks).

Genuine kefir grains reproduce indefinitely, increasing roughly 10% to 15% per batch under ideal conditions. Powdered commercial starter cultures, by contrast, dilute and die out after a few batches.

If you buy dehydrated grains, they require activation in sugar-water solutions for several 24-48 hour cycles before reaching full vigor. You cannot rush this activation phase without shocking the culture.

I searched the literature for the origin of water kefir grains (Tibicos) and learned they grow in Mexico on the prickly pear cactus. While visiting family in Mexico, I explored my grandparents’ cactus field with an older relative who taught me this method, Ruth.

We found Tibicos growing naturally on the cactus plants. Seeing them thrive in the wild completely shifted my understanding of how resilient these cultures can be when given the right environment.

How to Make Water Kefir: The Primary Fermentation

Getting your ratios right is the foundation of a successful batch. The standard base ratio is 1:1:1, meaning 1 tablespoon of water kefir grains to 1 tablespoon of sugar per 1 cup of water.

For a standard quart, you will use 1/4 cup sugar and 1/4 cup grains per 1 quart (or 1 liter) of filtered water. If you prefer to measure by weight, use 20 grams of grains, 80 grams of organic cane or unrefined sugar, and 1 liter of filtered water.

This measured recipe yields an 8% Brix starting sugar concentration. Your starting Brix should read 8-10°, and your starting pH should sit between 5.8 and 6.5.

After 24-48 hours at 20-28°C, your final Brix will drop to 3-5°, and your final pH will fall to 3.5-4.5. This pH drop is what makes the environment safe from unwanted organisms.

If you need a bulk ratio, use 50 grams of sugar to 1 liter of water for a 1:20 ratio. For a fast batch, you can push 4% sugar and 16% grains for a 24-hour cycle.

My standard recipe is 30g crystals and 80g sugar per litre of water, with 30 grams of dried fruit as a nitrogen source and two slices of organic citrus fruit to prevent unwanted organisms from settling. The citrus oils on the surface act as a natural shield.

I brew three 1-gallon vessels at a time. My first ferment uses 3/4 cup to 1 cup raw evaporated cane juice to 1 1/2 to 2 cups of grains.

Sucrose is strictly necessary to maintain grain structure. Non-caloric sweeteners like stevia, monkfruit, erythritol, or xylitol will starve grains and produce zero fermentation.

Recommended sugars include plain white cane sugar, raw evaporated cane juice, turbinado, sucanat, panela, piloncillo, or brown sugar. Dark, molasses-heavy sugars like dark muscovado provide minerals but can overstimulate yeast and lead to high alcohol production if used exclusively.

Honey contains natural antibacterial properties that degrade culture integrity in primary fermentation. Raw honey microbes can also outcompete your grains entirely.

When people ask me about differences in water kefir, kombucha and tepache, I always point out that water kefir uses the least sugar and ferments the fastest of the three. The flavor is also lighter and less acidic than kombucha.

Why Are My Water Kefir Grains Not Growing?

Grains require mineral-rich water to maintain their structure and reproduce. Hard water promotes growth, while distilled, reverse-osmosis, or soft water stunts grain growth unless remineralized.

Tap water containing chlorine or chloramine damages grains. Chlorine can be dissipated by letting water sit out for 24 hours or boiling, whereas chloramine does not off-gas and must be filtered or neutralized with ascorbic acid.

Mineral additives include 1/8 tsp baking soda per 2 liters, a pinch of sea salt or pink Himalayan salt, a clean piece of eggshell, or 1 tsp to 1 tbsp unsulphured blackstrap molasses. A farmer I know, James, gave me a tip to use a clean eggshell when my grains looked sluggish.

The calcium carbonate immediately perked them up. I keep my grains mineralized each batch by using 4 tablespoons cane sugar per quart, a few drops of unsulphured molasses, and a good pinch of baking soda.

That revived growth in my productive-but-non-growing grains without giving the finished drink the heavy off-flavor that comes from using a full tablespoon of molasses. Every third batch I add 1 tbsp molasses for iron, baking soda, or 1 tbsp organic coconut sugar.

Occasionally, I will add a scant 1/4 tsp pink Himalayan salt or half a washed organic eggshell. These trace minerals make the difference between a flat brew and a highly active culture.

How Long Does the First Ferment Take?

The First Fermentation (F1) is conducted aerobically using a breathable cover like a tight-weave cloth or coffee filter secured with a rubber band. You can also use a loosely capped lid for 24-48 hours at 68-78°F (20-26°C).

Fermenting past 72 hours can starve grains and produce excessive acidity. Your preferred brewing temperature is about 75°F for a balanced flavor profile.

At 65-68°F in a heated northern house, the process takes about 5 days. In the summer at 80°F ambient room temp, it takes only 2-3 days.

During winter, I keep my first-ferment vessels inside a plastic tub on a rack with an electric seedling heating mat and thermostat underneath to maintain a stable temperature. Without this setup, my winter batches would take weeks.

I ferment for two days, bottle it with fresh fruit or juice for another day, and refrigerate for at least a day. Alcohol content in standard water kefir remains low, typically under 0.5% to 1.0%.

Extended anaerobic ferments with excess fruit sugar will elevate alcohol levels. If you want a strictly non-alcoholic drink, keep your secondary fermentation brief.

How to Make Water Kefir Fizz: The Second Fermentation

The Second Fermentation (F2) is conducted anaerobically in sealed, pressure-rated swing-top glass bottles or rigid plastic soda bottles for 12-48 hours to generate carbonation. For the fruit phase of secondary fermentation, I avoid tight glass lids and use a plastic soda bottle.

I pour the liquid through a strainer, mash the fruit a little with a spoon to extract juice, top with bottled spring water leaving space in the neck, and leave it on the counter for 12-48 hours. You wait until the bottle gets rock hard to squeeze before refrigerating.

I avoid pureeing fruit because it forms a fruit plug in the neck and creates a volcano. Chopped fruit works best for safe and consistent carbonation.

People who attend my workshops, including Steven, often struggle with flat second ferments. I told Steven to add a chunk of fresh ginger and half a dozen raisins to his next batch, and he texted me a photo of a perfectly carbonated strawberry bottle the next day.

High-fizz fruits include strawberries, raspberries, blackberries, fresh ginger, mango, and peaches. Dried fruit options include unsulphured apricots, raisins, prunes, dates, and dried figs.

Excellent flavor pairings include nectarine ginger, rosemary lemonade, rosemary grapefruit, blackberry peach, strawberry basil, raspberry mint, plum ginger spice, and blueberry cherry juice. Cooled brewed teas like Greek mountain tea, hibiscus, or mate can be blended directly into strained kefir for F2.

When testing carbonation in flip-top bottles without opening them, I shine a flashlight at the bottom of the bottle while giving it a gentle swirl. Champagne-like bubbles start rising if carbonation has begun.

Dried cranberries or raisins added to the second ferment will also puff up and get super bloated with CO2 when carbonating correctly. This is a great visual cue for beginners.

Second ferment flavoring is where you get to be creative, but always keep safety in mind. A good fermentation kit will include a plastic bottle specifically for this testing phase.

What Does Water Kefir Do to Your Gut?

When I started drinking water kefir, I wasn’t aware that you needed to ease into it and drank around a litre a day. It sounded like an orchestra was playing in my gut, with very frequent bowel movements.

Those symptoms passed, but the ease-in adjustment period took around two weeks. If you are wondering does kombucha make you poop, the same logic applies to water kefir.

The sudden influx of probiotics and yeast into your gut microbiome causes a rapid shift in transit time. Start with 4 ounces a day for the first week to let your system adapt.

Water kefir introduces billions of beneficial bacteria and yeast to your digestive tract. This influx crowds out pathogenic bacteria and supports nutrient absorption.

I have seen people I’ve helped get started with fermentation experience massive energy shifts once their gut adjusts. The key is consistency and patience during the initial die-off phase.

Continuous Brew and Alternative Methods

I make continuous batches using pure coconut water. I use 1 packet of Cultures for Health starter grains in 1 liter of plain coconut water for 1-2 days at room temperature.

Once fizzy, I transfer the entire contents without straining grains into a 1-gallon bottle. I add 1 liter coconut hibiscus tea, 1 liter plain coconut water, and 1/2 liter fruit juice, leave it overnight at room temperature, and refrigerate.

I have run this method for close to a year and produced six or seven gallons from one packet. This continuous method is incredibly low maintenance.

I also brew 2 gallons at a time in a beer brewing bucket fitted with an airlock lid. I use turbinado sugar and 4-7 cups of grains, fermenting for about 8 days until completely dry.

For secondary fermentation, I strain into three half-gallon mason jars and one regular mason jar with frozen fruit, dried fruit, juice, and herbs for 2-3 days. I burp them morning and night before transferring to flip tops and growlers in the fridge.

Troubleshooting Water Kefir

I’ve had geysers erupt with the amount of fizz in my water kefir where the whole bottle empties, especially with strawberry water kefir. I’ve learned to open all of my bottles outside now because it can get messy.

When opening, I usually have to open and close the cap three to four times to avoid making a mess. This slow release of pressure prevents the liquid from shooting straight up into your face.

To eliminate kahm yeast, I sanitize vessels and wipe the top 2 inches inside the rim with distilled white vinegar. This simple sanitization step keeps unwanted surface yeasts from taking hold.

A vomit-like smell indicates contamination with butyric acid. This is typically resolved by discarding the liquid, resting the grains, and checking your pH.

Milk kefir grains can occasionally be adapted to water kefir by repeatedly fermenting them in sugar-water solutions with sea salt and molasses. You reduce cycle times over 4 successive batches, though failure rates are high and converted grains cannot be reverted to dairy.

Do not attempt this conversion unless you have excess milk grains you are willing to lose. The environmental shift is incredibly stressful for the culture.

Mastering how to make water kefir takes patience and a willingness to adjust your minerals and temperatures. Start with the 1:1:1 ratio, use a plastic soda bottle for your second ferment, and never skip the ginger and raisins if you want real fizz.
